Revolutionary Wings chefs are innovating with sauced and tossed chicken | Neighborhood Eats

The chicken wing revolution will be televised. This hidden gem near San Antonio's airport is serving up new spins on the classic big-game meal.

SAN ANTONIO — The Super Bowl may be over, but that doesn't mean that hot wing season has to be, too.

KENS 5's Justin Calderon visited Revolutionary Wings, where a culinary uprising is under way.

The restaurant, which is located on San Antonio's north side within site of the airport, is serving up some truly "wingmarkable" food.

This hidden gem is saucing and tossing around some innovative ideas for serving chicken wings, and it's not a dive or a sports bar, either. They provide a complete dining experience.

"I am from Buffalo, New York, so that was the driving force behind opening a wing truck and wing restaurant," said Joshua Paprocki, a chef and co-owner of the business along with his wife, Felicia Lee.

The place started out eight years ago as a food truck that the couple operated. Both have backgrounds in fine dining, and they wanted to start a business that elevated hot wings, creating picture perfect plates in the process.

"Our traditional wing section is your normal run of the mill," Paprocki said. "Traditional buffalo, butter garlic parm, things like that. And then we have a signature section... from a hot Cheeto to a Belgian waffle or grilled and smoked wings. So on and so forth. We got about 30 different flavors."

That includes everything from black garlic or cheddar to grilled chimichurri or dill wings.

But don't forget about the burgers and sandwiches... They're also part of the revolution!

"Everything is scratch-made. Everything is made in-house. From our pickles all the way to our desserts, but most of all our wings," Lee said. "We are also on Facebook, Instagram and we also have our own app."
