SAN ANTONIO — Christmas season is in full swing and that means drinking hot chocolate and eating tons of candy canes. But why not mix the best of the holiday flavors together and create chocolate peppermint cookies?
KENS 5 did.
We made Chocolate Peppermint Cookies and got the recipe from the Frontier Co-op.
It takes approximately 40 minutes to mix all of the ingredients together, roll the dough, bake the cookies, and decorate them with yummy toppings. You will need quite a few ingredients, but the end result is definitely worth it.
Serve them to Santa, your friends, family and co-workers and be prepared, because they will probably ask you for the recipe.
Ingredients needed:
2 ¼ cups all-purpose flour
½ cup cocoa baking powder
1 teaspoon baking soda
½ teaspoon Sea salt or Himalayan pink salt
1 cup unsalted butter
1 cup pure cane sugar
¾ cup brown sugar
2 large eggs
1 teaspoon pure vanilla extract
½ teaspoon peppermint extract
1 cup semi-sweet chocolate chips
½ cup crushed peppermint candy canes
Toppings:
¾ cup semi-sweet chocolate chips (melted)
¼ cup of crushed candy canes
Directions:
1. Start by preheating the oven to 350 degrees
2. In a medium bowl stir together flour, cocoa powder, baking soda and salt
3. Then grab a large bowl and mix sugar, brown sugar, vanilla extract, and peppermint extract. Add eggs and mix well.
4. Add your dry ingredients to your wet ingredients in 3 to 4 batches. Keep mixing with each addition. Stir in the chocolate chips and crushed candy canes.
5. Portion your dough into little balls and place them on a baking sheet
6. Bake for 10 to 12 minutes.
7. Let them cool. Then drizzle with chocolate and sprinkle them with crushed candy canes.
8. Finally serve and enjoy!
